Like fine wines, the best cheeses are carefully produced, aged to peak ripeness, and imbued with the tastes of the land that produced them. And as with wines, though France may be the motherland, you can find excellent domestic cheeses now too. Anyone can develop a palate for the good stuff, with a little help from the pros.
